Nutritional Analysis

The menu offered in schools in the central contract meets and exceeds current nutritional standards. Further, overall the menu meets, and in some cases exceeds, the more stringent, recently revised, nutrient based standards set by the Caroline Walker Trust. In a small number of instances menus are marginally below guidelines. This is due to the recent increase in requirements and the differences are only slight and not cause for concern.

When menus are analysed it is important to obtain an accurate representation of the menu. Therefore, children's "favourite" dishes are chosen for analysis such as puddings and chips.

Initial Catering work hard developing recipes in order that they are as healthy as possible. All recipes are independently analysed by Kent Scientific Services. Menu analysis is based on the results from Kent Scientific Services.

The table provided illustrates how both the standard and vegetarian menu provided in Croydon primary schools meets and exceeds the Caroline Walker Trust recommendations. The following nutrients should meet 100% of quantity set by the Trust:

  • Folate
  • Vitamin C
  • Vitamin A
  • Calcium
  • Zinc
  • Iron
  • Protein
  • Fibre
  • Carbohydrate
  • Energy

The following nutrients should not exceed 100% of the quantity set by the Trust:

  • Fat
  • Saturated Fat
  • Sodium
  • Extrinsic Sugar (sugar not found naturally in food)
